A Look at Hiring In a Pandemic for California's Casinos

The San Manuel Casino in California is set for an expansion. The project will be completed and open to the public on July 24th. Notably, it will mark the Casino’s 35th anniversary. This will be the first phase of expansion for the Casino.

Additions include a 24-hour restaurant, a fancy dining venue, as well as a few new retail stores. The resort will also tack on 432 rooms, 127 of which will be brand new suites. Those rooms are set to open in the Winter of 2021, while a brand new event venue that will hold 2,300 people will be open in 2022. All of these changes will come together to cost the Casino approximately $550 million and two years of work. 

Gaming Additions

The Casino will be adding 1,300 slots, bringing the grand total of slots on the property to above 6,500. With that, the San Manuel Casino will be the holder of the most slot machines on the West Coast. There will also be 40 gaming tables added, 39 of which will include progressive side bets. That’ll make the Casino the owner of the most progressive table games in the United States. 

The San Manuel also plans to open a new High Limit Room that will hold eight table games, 35 slots, and 11 bar top slots. 

Shopping and Dining

The new retail stores will include women’s luxury stores with hand picked top-quality products including jewelry, bags, high-end watches, and home decor. There will also be a men’s store with high end menswear and sportswear. 

Alongside the dining-related expansion, the Casino has named Everton Clarke and Matthew Smith as the Executive Chefs. At the San Manuel, the culinary experience will run through these two. Clarke was most recently the opening executive chef at JW Marriott Minneapolis and opening chef at JW Marriott Dubai. He will have the freedom to create his own menus across the casino’s restaurants. The hope is that the menu will be dynamic in conjunction with seasonality and tastes.

Clarke Smith will be responsible for the culinary operations at the Casino. His role will include creating menu concepts, standardizing recipes, controlling labor and food cost control, overseeing production and waste control and having purchasing and inventory control. 

Historical Background and Community Involvement

The San Manuel Casino opened as a bingo hall on 24 July 1986. In 1994, the bingo hall expanded into a 100,000 square foot casino that featured slot machines and card games.

Side-by-side with the Casino’s growth, the San Manuel Band of Missions has worked to improve the community around them. The Tribe has donated millions of dollars to charitable causes in the area. Those donations include $7 million to Mary’s Mercy Center for a homeless shelter and $25 million to Loma Linda University Children’s Hospital.

The Casino is also working to properly staff the expansion. General Manager Peter Arceo has said, “without people, it’s just a nice building.” In order to find those people, the Casino has set up a recruitment center at the Ontario Mills Shopping Center as well as in other surrounding areas.
